Goat carcass cutting demonstration

At the annual Western Maryland Goat Field Day & Sale (held in October), Paul Kuber showed field day participants how to cut up a goat carcass and prepare chevon (goat meat).  Dr. Kuber is a meat science specialist from The Ohio State University.

If you missed Dr. Kuber's excellent presentation at the goat field day, you'll have another chance to see it.  Dr. Kuber will give a similar presentation during Delaware Ag Week.  He will fabricate a goat carcass into cuts, prepare samples of chevon for tasting, and discuss potential (qualitly) grading standards for goat carcasses.

His presentation is scheduled for Tuesday, January 18, 2011, from 6 p.m. to 9 p.m.  It will be held in the Exhibit Hall Board Room at the Delaware State Fairgrounds in Harrington, Delaware.
